BBQ Shrimp (Christmas Eve)F

Marinated shrimp grilled or broiled.

Ingredients

  • 2 lbs shrimp (16-18 count, peeled and deveined, tails on)
  • 1 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp lemon juice
  • 1 tbsp tomato paste (or ketchup)
  • 1 tbsp oregano (dried or fresh)
  • 3 cloves garlic (chopped fine)
  • 3 tbsp fresh parsley (chopped)
  • 1 tsp tabasco or hot sauce
  • salt (to taste)
  • fresh ground pepper (to taste)

Instructions

  • Peel and de-vein shrimp, leaving tails on.
  • Blend all sauce ingredients and pour over shrimp. Marinate 2 hours or overnight.
  • Cook shrimp over hot coals or under the broiler for 2–5 minutes, then turn over. Do not overcook.
  • Heat the sauce and serve shrimp with sauce and bread.
